Ingredients:
- 10lbs Catfish
- 2 parts Cornmeal
- 1 part Corn flour (masa)
- lil Kosher salt
- lil lemon pepper
- lil ground cayenne pepper
- lil dried thyme
- 2 cups Buttermilk
- 5 shakes tabasco hot sauce
- half gallon peanut or canola oil
Preparation Instructions:
Use filets or if fish is too big cut filets into strips to ensure even cooking and put in bowl with buttermilk add 5 shakes of tabasco and mix. In seperate bowl add all cornmeal, corn flour, and rest of seasoning, mix well. Drench catfish filets or strips in cornmeal mix. Add oil to cooking pot or deep frier, if adding to pot dont fill over half way. Preheat oil to 325 degrees and fry fish until golden brown. I like it with tar tar sauce or ketchup.
