smoked salmon

Ingredients: 
  • 2 large salmon fillet's
  • 4 whater
  • 2 1/2 salt
  • 2 1/2 brown sugar
  • 1 cup honey
Preparation Instructions: 

have 2 salmon fillets then cut into 2oz strips.

mix 4 cups watter with 2 1/2 cups salt + 2 1/2 cups brown sugar.

next put the 2 oz fillets in the brine or water solution, let soak in fridge for 2 hours.

after 2 hours preeheat oven to (100 deg) only hot enought to dry salmon.

next take salmon fillets out of brine put on a cookie sheet.

put in oven for 1 Hr.(to dry) let set for 1/2 hour after oven to cool doun.

next fire up the smoker with ur favorite wood chips (make shure you soak wood chips befor puting in)

let salmon smoke for 8 hrs for a soft smoke  and 10-12 hrs for a good hard smoke 

note: halfway thru the smoke take salmon out to glaze warm with honey.
