- 1 1/2 lb fresh salmon cut into 1/2" pieces, skin and bones removed
- 1/2 onion, chopped
- 1 slice soft bread, crust removed, cut into crumbs
- 1 T spicy brown mustard
- 3 T mayonnaise
- garlic salt
- salt and pepper to taste
- 2T fresh, chopped parsley
- Flour for dipping
- Egg mixture - 2 egg, tsp water, T of veg oil
- Bread crumbs
Put salmon, onion, bread, mustard, mayo, garlic salt, salt & pepper and parsley in bowl and mix well. Shape approx 1/4 cup into 3/4" thick patties and put on wax paper. Freeze for 15 minutes. If cooking immediately, heat oil in pan. Coat patty in flour, egg mixture, then bread crumbs and fry, turning once til golden brown (approx 2 min a side). Drain on paper towels, serve immediately with tartar or creamy garlic dressing. Perfect with sauteed vegetables for a meal.
For later use, coat as directed above and place on fresh wax paper and put back into freezer. When patties are individually frozen, place in ziploc and store in freezer.
