Grilled Salmon

Ingredients: 
  • 1 Filet of Salmon about 1 1/2lbs
  • 1/2 stick Butter
  • 8-10 Lemon slices sliced crossways
  • 1 Lime cut in quarters
  • 1/2 tsp Rosemary
  • 1/2 tsp Lemon Pepper
  • 1/2 tsp Garlic Salt
Preparation Instructions: 

Mix dry seasonings together and cut lemon in thin round slices.  Sprinkle 1/2 of dry seasonings on bottom half of skinless salmon filet and place on Heavy Duty Aluminum Foil leaving enough foil to seal fish completely inside while on the grill.  Sprinkle remaining seasonings on top half of filet and then arrange alternating slices of butter and lemon to completely cover filet.  Tightly seal the foil around the fish.

Grill the fish over medium heat for about 8 minutes per side using mesquite wood mixed in with charcoal.  Open foil and squeeze lime quarters over hot fish after removing lemon slices and let it cook for a several minutes with the foil open and the grill lid closed to give the fish a smoky flavor.   

Fish can also be placed in the over for approx. 20 min at 375 degress in a glass baking dish if you dont want to grill it.
