Fish Fry - Catfish

Ingredients: 
  • 4 Cup All Purpose Flour
  • 2 Cup Yellow Corn Meal
  • 3/4 Cup Lowry's Season Salt (or Walmart brand)
  • 1/4 Cup Black Pepper
  • 1/4 Cup Salt
  • 10 Fillets Catfish
  • 1.5 Gallon Canola Oil
Preparation Instructions: 

Mix all dry ingredients in Large contain with a Lid that seals.  Shake well to mix. The mixture should smell like Spicy Bread dough.  If it does not have the savory top note add more Season Salt.  If it has too much Savoryness add more flour and corn meal.  (need to add both so you keep the mixture balanced.)

Heat 1.5 gallon of Canola Oil to 375* in Outdoor Propane Fryer. (You can use Electric heat indoors but frying outside makes for easier clean up and does not make the house smell like grease for days.)

Cut Fillets into short strip about 3 inches wide. Scoring 1/2 deep in 2 spots along the strip.

Place in container with dry ingredients seal closed and shake well to coat.

Fry Catfish "fingers" in 350* oil until they float and are golden brown.  Should be 7 -8 minutes.

Serve and Enjoy.
